PREPARING FLAVORED COFFEE WITH THE MOKA

Making a flavored coffee with the moka is very simple.

Fill the moka with room temperature water up to the valve and insert the funnel filter. Then, fill half of the funnel filter with coffee powder, add half teaspoon of your favorite spices, and add more coffee powder to fill the remainder of the funnel filter.  Screw the tank onto the boiler and place it onto the heat source at the minimum setting.  At the first gurgling, remove the moka from the heat source, wait a moment and taste the coffee. 

The spice must be finely ground or powdered. Different types of spices may be used such as cocoa,coriander, cloves, cinnamon, vanilla, ginger, cardamom and nutmeg.. A popular flavoring is obtained by using the pisto napoletano.  “Neapolitan pisto” is mix of spices typically used for Christmas cakes. The ingredients for 100 grams of Neapolitan pisto are:

48 g ground cinnamon
16 g pepper
16 g nutmeg
 7 g cloves
 7 g star anise
 6 g coriander
 
 After the spices are ground into a fine powder, lightly toast them in a pan.
