WE USE THE V60 AS COFFEE PAPER FILTER
The V 60 is comprised of a V-shaped top cone with the sides forming an angle of 60 °that rests on a dripper. The paper filter rests inside the upper cone. The cone can have a lower valve that regulates the flow of percolation and, if it is closed, regulates the times of infusion.
Ingrediants :
– First Boiling water at a temperature between 89 ° C and 92 ° C
– Coffee / water ratio 1/16
– Extraction time 120 – 150 seconds
– Grain size 400 – 800 micrometers
Get the paper filter wet with the V 60 resting on the dripper. In this way we remove the smell of paper from the filter and we heat the dripper. – Let’s empty the dripper. – We put the coffee in the paper filter and level it. – We wet the coffee with about 30 ml of water and this first infusion lasts about 30 – 40 seconds. – After this first infusion, pour the rest of the water with slow circular movements without getting the edges of the coffee wet otherwise the water passes through the filter and does not pass through the coffee. If you desire, with a small spoon, mix the coffee with water, paying attention that you do not break the filter. – We await the end of the percolation. You can sweeten the coffee with any kind of sugar that you like, I suggest to use sugar candied.
