The chemex coffee maker is composed of a single piece, has the shape of an hourglass and the paper filter must be placed in the upper part. In the narrow part there is a wooden ring held by a leather strap that serves to take the coffee pot without getting burned.
For our extraction you need:
– First boiling water temperature 90 – 92 ° C
– Coffee / water ratio 1/16
– Extraction time 3 – 4 minutes
– Grain size 440 – 800 micrometers
METHOD
Wet the paper filter to remove the scent of the paper from the filter and heat the coffee maker.
Empty the chemex, put the coffee in the paper filter and level it. Wet the coffee with about 30 ml of water and this first infusion lasts about 30 – 40 seconds. After this first infusion pour the rest of the water in a circular manner without wetting the edges otherwise the water will pass through the filter and will not pass through the coffee. If you want you can use a small spoon to mix the coffee with water but make sure not to break the filter. At the end of the percolation we can sweeten with a sugar of your liking, I recommend candied sugar.
