There is an ancient knowledge that is handed down in the Torrefazione Forte Antonio, that of knowing how to listen when the bean reaches the right degree of roasting. Knowing how to recognize it is an art: the art of “Toasting by ear”.

In addition to this knowledge gained over years of experience, we add modern technology to ensure that the roasted bean has all the specific characteristics for an excellent blend, the coffee is tested with the colorimeter and the refractometer, these tools give the possibility to adjust the roasting curve, to obtain blends with a characteristic sensorial profile.
