COFFEE MADE WITH NEAPOLITAN COFFEE MAKER

The Neapolitan coffee maker consists of three main parts:

– A pot with a small hole
– A pot with a spout
– A perforated basket that contains the ground coffee.

Ingredients and Process:

– Cold water (that will be heated up to a boil)
– Coffee/water ratio of 1/8
– Extraction/percolation time 2 – 4 minutes
– Grain size 450 – 800 micrometers.

Pour cold water into the pot without spout up to 1 cm below the hole for the steam output. (Note: If you want you can add a teaspoon of ground coffee into the water to aromatize the water.)

Insert the filter basket, fill with ground coffee, without pressing, and screw on the filter cover.  Invert the pot with the spout and place/secure it over the pot containing the water and filter assembly.

Place it on a heat source on low to medium heat to bring it to a boil.  When the water starts to boil, steam will come out of the hole in the lower jug.  Turn off the heat source and wait a minute so the water to settle and cool a little.  Then, turn the coffee maker upside down and wait for the percolation process to complete.  When the percolation ends, it’s ready to serve.
