It is made up of two globes, one upper and one lower, in the lower one we pour the cold water that will be heated by the burner. The hot water rises in the upper globe and begins the infusion followed by the decoction that we can interrupt by turning off the burner. At this point, due to a depression that is created in the lower globe, the coffee is sucked in.
Ingredients:
– Cold water
– Coffee/water ratio 1/15
– Extraction time between 120 and 180 seconds
– Granulometry 400 – 800 micrometers.
We pour the water into the lower globe, turn on the burner and put the coffee in the upper globe. When the hot water has risen in the upper globe, we mix the coffee and water with a spatula and after about a minute we turn off the burner. The coffee (drink) will be sucked into the lower globe, now we detach the upper globe and we can serve the coffee. If a paper filter is not inserted in the syphon, before serving we filter the coffee with a V60.
